Potatoes On The Half Shell

Bake white potatoes (Irish, Russet, etc.) at 425° F for about an hour. Better if potatoes have been greased and baked rather than wrapped in foil.

Half each potato, scoop out the potato into a bowl and set shell aside. Mash potatoes as usual with butter, hot milk and add about 2 tbls. of grated onion for about 6 potatoes, some parsley and salt and pepper.

Refill shells and top with grated cheddar or slices of Velveta cheese (that has been cut to fit the top). Put back in the oven and melt the cheese.
