Nancy's Sweet Potato Casserole

• 3 cups sweet potatoes, baked and mashed
• 1/2 cup margarine (1 stick)
• 1 cup sugar
• 2 eggs
• 1/4 cup whole milk
• 1 cup coconut

Add margarine to potatoes while hot. Cool potatoes and add remaining ingredients. Put into an oblong baking dish. Pour topping over potatoes. Bake in oven at 350° F 20-25 minutes.

Topping:

• 1/2 cup self rising flour *
• 1/2 cup margarine (1 stick)
• 1/4 cup whole milk
• 1 cup brown sugar
• 1 cup chopped nuts

* if you don't have self rising flour, you can use 1/2 cup of all-purpose flour mixed with a rounded half teaspoon of baking powder and a pinch of salt
