Green Peas, French Style
Lightly cover bottom of small skillet in water and add ground sausage. Brown slowly, turning sausage over frequently until meat is tender. Add chopped green onion or leek and sauté with meat about 1 minute. Remove pan and drain mixture on a paper towel.
Warm or cook peas with mushroom pieces according to directions, being careful not to overcook. Season with butter, sugar, salt and parsley. Add chopped pimiento and the cooked sausage mixture. Toss lightly together and serve warm with shredded, vinegar sprinkled lettuce.
Lettuce may be tossed in with the peas and sausage mixture just before serving or used as a garnish or nest for the peas. For added variety, mixture may be sprinkled with grated boiled egg when ready to serve.
