Akara (Black-Eyed Pea Fritters)

Clean peas and soak overnight in cold water. Remove and discard skins, drain peas in a colander.

Process peas into a thick paste, adding a little water if necessary. Add remaining ingredients (except oil). Let set in refrigerator for several hours.

Heat oil in deep skillet. Beat the batter with a wire whisk or wooden spoon for a few minutes. Use two spoons to scoop batter into oil by spoonfuls. Fry until golden brown, turning frequently.
