Chop fine and let set an hour. Squeeze and drain thoroughly.

Place in enamel pans to be cooked. Add to this mixture:

Place on stove and let simmer for an hour, do not boil. When mixture turns a whitish color and reaches the boiling point put in sterilized jars and seal. This makes about 25 pints.



For the pickling spice:

Combine all ingredients. If you use about 2 teaspoons of each spice and 1 teaspoon of turmeric, the amount would be about right for this Chow Chow recipe.
