Wild Ducks With Wild Rice Dressing
Clean ducks well. Put a flat rack in the bottom of a Dutch oven large enough for the number of ducks you are cooking.
Salt and pepper the outside of the ducks. Stuff ducks with celery, carrot sticks, onion (optional) and apples (quartered).
Place on rack and rub with margarine in the Dutch oven. Add enough water to half cover the ducks.
Bake at 350° F for about 2 hours, turning over once. Be sure the water doesn't cook out completely, it is used in the dressing.
A few minutes before the ducks are done, remove them from the oven. Add the rice dressing to the broth, remove the rack and place the ducks directly on the rice dressing. Return to the oven and finish cooking.
Dressing:
Cook 1/2 cup wild rice according to directions. Cook 1 cup Uncle Ben's rice until nearly done. Mix together.
Sauté 1/2 cup fresh mushrooms, 1/2 cup chopped celery and 1/2 cup chopped onion. Combine with 1 can cream of mushroom soup and add to rice mixture. Add broth from ducks to flavor.
