Exotic Crabmeat and Shrimp
Chop fine: 12 shallots, 1/2 small white onion, 9 stalks tender celery, 1 bell pepper, 1 bunch parsley
Grate: 1 lb. Wisconsin sharp cheese
Season grated cheese with: Worcestershire sauce, Tabasco and several drops of onion juice
Peel 1 lb. fresh shrimp and place in salted water to which 1/2 - 3/4 bay leaf and crab boil has been added. Cook 3-5 minutes after reaching a boil.
Melt 2 sticks butter in deep iron skillet, add chopped seasoning and sauté until tender.
Melt 1/2 stick butter in sauce pan and add 1/2 cup flour and stir until smooth. Then add 2-1/2 cups milk and make sauce.
Add sautéed seasonings, juice of one lemon, Tabasco and Worcestershire.
Add grated cheese and stir well.
Add shrimp and 1-1/2 lbs. crabmeat.
Lastly put in a pint of homemade bread crumbs from toasted bread.
Bake at 350° F 20 - 25 minutes until bubbling.
