Evelyn's Gumbo
Fry:
- 4-5 slices of bacon
- 1 slice ham
Add:
- 1 lb. okra, chopped
- 1-2 onions
- 1 clove garlic, minced
Sauté together until okra is brown.
Add:
- 1 qt. tomatoes
- 2 bay leaves
- 1 tsp. thyme
- 1 can tomato sauce
- sugar
- salt
- pepper
- water
Simmer together 1-1/2 hours with celery tops added and then remove the celery tops.
Add:
- crabmeat
- shrimp
- 1 tbl. LaChoy Brown Gravy Sauce
- 1 tsp. gumbo filet (light tsp.)
- Worcestershire sauce
Make roux:
Brown flour in grease until brown and it forms a smooth paste. Then add to gumbo to thicken.
