Chicken Cacciatore
(This is great! Cheap for company and they will rave over how good it is.)
Double this sauce recipe for lots of sauce. Better if it is doubled for each chicken used.
Heat oil in large skillet. Add chicken. Brown slowly. Remove chicken. Add onions and garlic. Cook until tender but not brown. Add remaining ingredients, except wine. Return chicken. Cover and simmer 45 minutes. Add wine. Cook uncovered 20 minutes until tender.
To Serve: skim off excess fat and remove bay leaves. Arrange chicken on a warm platter and ladle sauce over it.
