Lemon Bars

Combine:

• 1/2 cup butter
• 1 cup flour
• 1/4 cup powdered sugar

Mash like pastry and pack in bottom of pan until smooth.

Bake at 350° F until lightly browned, 10-12 minutes.

Combine:

• 2 tbls. lemon juice & rind of lemon
• 2 eggs slightly beaten

Mix together:

• 1 cup sugar
• 2 tbls. flour
• 1/2 tsp. baking soda

Then add egg and lemon juice mixture. Pour over crust and bake 20-25 minutes at 350° F.

Cool well and ice with lemon juice, sugar and butter.
