Eagle Brand Lemon Pie
This can be made 2 ways and both ways are good and easy to make.

Method 1
- baked pie shell
- 1/2 cup lemon juice (more if you like tart pies)
- 1 tsp. grated lemon rind or 1/4 tsp. lemon extract (more if you like tart pies)
- 1-1/3 cups (15 oz. can) Eagle Brand Condensed Milk
- 3 eggs, separated
Mix ingredients together (except egg whites) and pour into shell. Beat whites and add 4 tbls. sugar to them (Watch it. 4 may be too many.). Bake at 325° F, until brown.

Method 2
- graham cracker pie shell
- 1/2 cup lemon juice (more if you like tart pies)
- 1 tsp. grated lemon rind or 1/4 tsp. lemon extract (more if you like tart pies)
- 1-1/3 cups (15 oz. can) Eagle Brand Condensed Milk
- 2 eggs, beaten
Combine filling ingredients in a saucepan and cook for a few minutes. Pour into shell; chill and add whipped cream on top.
