Buttermilk Pralines
Put sugar, soda, buttermilk, corn syrup and butter in a large pan and cook over medium high heat to medium ball stage (245° F), stirring constantly. It will be medium to dark brown in color.
Remove from heat and add pecans and vanilla. Beat with an electric mixer until creamy.
Drop by spoonfuls onto waxed paper or parchment paper.
Keeps indefinitely in a covered container.
