Blackberry Or Other Berry Jelly

(not good for strawberries)


Wash berries and cook with just enough water so you can see it in the pot. Cover and boil.

Drain juice into a container and use equal portions of sugar to juice (half and half). Cook until jelly drops thickly from spoon. Use large pot and do not cook too much at a time. Put a small amount in a saucer and place in refrigerator to see if it will jell. That's the test.

Boil jelly fast and stay with it!

Can in mason jars. Cover the jelly in the jars with paraffin if you don't use sealing lids.
